Shabushabu (Japanese Hot Pot Recipe)【これぞニッポンの肉料理】しゃぶしゃぶを家でしたよ。

Today we’re going to make one of the most popular hot pots (nabe) in Japan. Although we use pork, you can use beef if you prefer. Subscribe for more videos!

INGREDIENTS:
Thinly sliced pork
Chinese cabbage
Mizuna
Carrots
Shiitake & Enoki Mushrooms
Tofu
SESAME SAUCE
6 tablespoons Sesame seeds
2 tablespoons Soy Sauce
1 tablespoon Mirin
2 tablespoons Sake
1 tablespoon Sugar
1/3 teaspoon Instant Dashi Powder (optional)
PONZU SAUCE
1/4 cup Soy sauce
1/4 cup Mirin
1/4 cup Sake
1/2 juice of one lemon
3-4 tablespoons Grated daikon radish
Chopped green onions
chili pepper flakes
DIRECTIONS:
FIrst put a couple of konbu strips into a large pot of water and set aside. Wash and cut up all the vegetables. Place the vegetables and meat on large plates decoratively. You need two sauces for the shabushabu.
To make the sesame sauce, combine sesame seeds, soy sauce, mirin, sake, sugar and instant dashi (optional). Mix in a blender until smooth and creamy. To make the ponzu sauce, combine the soy sauce, mirin and sake in a microwave-safe bowl. Microwave on high for 2-3 minutes. You can also use a saucepan instead by bringing the mixture to a boil. Squeeze lemon juice and stir to combine. To make the condiments, combine daikon and chili pepper flakes in a blender. Chop the green onions. Serve these on the side and add to the sauces as desired.
Bring the konbu stock to a boil. Once it reaches boiling, immediately discard konbu. (As optional, you can leave konbu as it is. But do not boil the water.)Your stock is ready. Start with a couple of meat slices. Add them to the hot simmering pot and swish until no longer pink and cooked. Dip into your favorite sauce and eat. Add some vegetables to your pot. Alternate between meat and vegetables and enjoy family style. You can end your meal by adding some udon noodles or ramen noodles into the remaining soup stock. Once the noodles are cooked, enjoy with some of the soup and add salt and pepper to your individual bowls. You can also add more ponzu sauce for extra flavor. Enjoy!

醤油 大さじ 2
砂糖 大さじ 1
みりん 大さじ 1
お酢 大さじ2~3(お好みで)
顆粒だし 小さじ1/4~1/3(お好みで)
ブレンダーに入れて滑らかになるまで混ぜます。
※みりんのアルコールが気になる方は、一度火に掛けてアルコールを飛ばしてください。
