Tips to make great rava dosa:
• Make sure to rest the batter for at least 15-20 min.
• Use a good quality non-stick dosa pan/tawa or a well-seasoned dosa pan/griddle/tawa
• Make sure the pan is really hot before spreading the batter
• Cook the dosa at medium-high heat until it’s bottom surface becomes golden-brown color
• Once the dosa is done it will easily come off the pan ( cook further if you want very crispy dosa)
• Use ghee/oil to get nice crispy dosa
*after 3-4 dosas, the batter might thicken, hence make sure to dilute it with water to achieve the butter milk consistency batter
Ingredients for Onion Dosa:
Batter – 1 cup rava (suji/semolina/cream of wheat), ½ cup rice flour, ¼ cup wheat flour(atta) or maida, 3 + ½ cups water;
1 tsp cumin seeds
1 tsp salt (or as per taste)
2 tbsp chopped coriander leaves/cilantro
1 tbsp chopped curry leaves
1 tsp grated ginger
1 ВЅ tsp sugar
1-2 green chillies (finely chopped)
2 to 3 cups finely chopped onions
Ghee/cooking oil
